What Is Daikon?

Daikon is a powerful healing white Japanese radish. It can be used like red radishes, in salads and stir fries, soups and sandwiches, or it can be ground up which makes it very hot! It can also be dried, and then it becomes very sweet and pungent, for use in soups and casseroles. When healing veggies are dried, they become extra powerful. It is the same with garlic, shiitake mushrooms, and many herbs.

David uses fresh grated Daikon in his Carrot Daikon Drink, which helps pull out animal foods, and in his miso soup in the dried form. Delicious, and so good for you, especially if you are headed in a healing direction because you want to stick around longer and enjoy life more.
