Make Your Own Healthy Bean Dishes

Do you like beans?

Some people don’t eat them because of gas or perhaps their doctor advised against it. Too bad, they are full of incredible nutrients, from calcium to protein.

Here are some ideas for you to try, so you can feel more satisfied with plant-based meals, instead of killing a chicken or cow or turkey or pig, harming your health and the environment…

Top 10 Ideas For Non-Bean Eaters

  1. Make Your Own Hummus-it’s cheaper, healthier and more delicious than store bought, and it saves plastic! Simply but garbage beans by the bag, rinse, soak, add bay leaf of combo strip, boil open and skim, continue boiling. When done, usually after about an hour, rinse and blend with olive oil, lemon juice, tahini, parsley, scallion, apple juice and spices. Yum!
  2. Bean Soup-Buy some dried black beans, kidney beans, navy beans, etc. and soak them in a LOT of water overnight with a bay leaf or piece of kombu sea veg. In the morning, bring to a boil for five minutes open, then rinse in cold water and add to a pot with water and a new bay leaf or kombu piece. Boil for an hour or until mostly soft. Then add a bit of wakame sea veg and shiitake mushrooms, as well as celery greens and stalks, carrots and onions. Boil gently covered for about :15, then season with shoyu, sea salt or miso, and serve.
  3. Bean Salad-Soak a few types of dried beans overnight, then boil for an hour or until soft. Remove water and rinse, then add italian dressing, olives, artichoke hearts, cucumber pieces, and fresh herbs. Voila!
  4. Rice with beans-Add 1/4 cup rinsed black, pinto, black soy, azuki or lentil to short or medium grain rice that has been rinsed. Soak for eight hours or overnight, then boil covered for :45 with a piece of Kombu. Great for burritos.
  5. Bean Burger-Cook a cup of black beans as above (rinse, soak, boil open with kombu, skim, boil closed, salt), then add 1/2 cup of cooked grain, spices and an egg or egg replacer. Put into food processor, then cook on grill or in skillet. Great with lots of veggies!!

  9. Remember, always soak your beans, rinse your beans, and try to skim the foam. This will make them more digestible, and reduce gas and bloating
  10. Beans are very good for your kidneys, and are very filling. Cooking your own makes them healthier and more environmentally sustainable. Also better tasting!!
